Pumpkin Coconut Smoothie Recipe

I love Coconut and I love Pumpkin Pie. Here’s a great smoothie recipe putting them all together into one yummy goodness!

Pumpkin Coconut Smoothie

Ingredients

  • 1 Scoop Vanilla Protein Powder
  • 1/4 Cup Pumpkin
  • 1/2 Banana
  • 1 Cup Almond Milk
  • 1/2 tbsp Coconut Butter
  • ice

Instructions

  1. In a blender mix together the protein powder, pumpkin, banana, almond milk, coconut, pumpkin pie spice, and ice. Add ice and more liquid until it reaches desired consistency

  2. Taste the smoothie and add a bit of sweetener if needed (sometimes the pumpkin just needs a dash of something sweet). Top with more coconut!

Recipe Notes

**Cook’s note: I add a bit of guar gum to my smoothies to thicken them up if they get too icy

 

** Substitute 1 tbsp unsweetened coconut in place of the 1/2 tbsp coconut butter
