I love Coconut and I love Pumpkin Pie. Here’s a great smoothie recipe putting them all together into one yummy goodness!
- 1 Scoop Vanilla Protein Powder
- 1/4 Cup Pumpkin
- 1/2 Banana
- 1 Cup Almond Milk
- 1/2 tbsp Coconut Butter
- In a blender mix together the protein powder, pumpkin, banana, almond milk, coconut, pumpkin pie spice, and ice. Add ice and more liquid until it reaches desired consistency
- Taste the smoothie and add a bit of sweetener if needed (sometimes the pumpkin just needs a dash of something sweet). Top with more coconut!
**Cook’s note: I add a bit of guar gum to my smoothies to thicken them up if they get too icy
** Substitute 1 tbsp unsweetened coconut in place of the 1/2 tbsp coconut butter
