Ice Cream {VDay} Sandwich Hearts

People people people… Happy Valentine’s Day! Love it or hate it, I always like to think of it as a day to treat yourself a little. Chocolate covered strawberries, done! Champagne to sip, you got it! Manicures, why don’t mind if I do… Eating everything in a heart shape, yes, yes you can.. totally acceptable.

However, some of you (ahem, me) might have been a little crazy busy lately and not exactly have had the time to throw something elaborate together for your sweetheart, friends, or family. Whoopsies!

Well, I’m here to help you out with a few last minute ideas.. dessert ideas of course. After all, I am YMC. Sugar makes everything better.

This is just a how to with a other few fun ideas- side note, why have I never made ice cream sandwiches with homemade cookies before? Helllooooo new obsession.

Homemade Ice Cream Sandwiches

sprinkles
chocolate bark, for drizzle

Place the cookies side by side on a baking sheet. Set the ice cream out and allow it to soften enough for spreading, a few minutes.

Using a scoop put a ball of ice cream on top of each cookie. Spread the ice cream out until it covers the entire surface. Place another cookie on top and roll the sides in sprinkles. Set the cookie back on the baking sheet.

Once you have finished all of the cookies (or, all of the cookies that you want) place the baking sheet into the freezer to allow the ice cream to harden. Right before serving melt the white chocolate and drizzle it overtop of the cookie sandwich. Garnish with more sprinkles!

Other fun ideas? Make cute heart sprinkle sundaes, or dip cookies in melted chocolate, add sprinkles, and allow to set. One of my other favorites? These chocolate covered cherry cake truffles (super easy to make) are impressive looking and super cute
