1000 Veggie {Detox} Soup

I just realized that the above mug actually has coffee written on it- which is one of my favorite things on the planet (half-caf of course). However, what is in this mug is in fact soup. Can we just talk for a minute about the amount of construction workers in my place right now? I feel like I’m running a dusty daycare for 40 year old men… honestly.
Does anyone else remember that terrible cabbage soup diet that went around for a few years? I’m pretty sure there were a few celebrities touting it’s amazing powers for a while there- um, no thanks. I do, however, remember liking the soup- the broth was a little spicy with cabbage, which I actually do quite enjoy.
My favorite part about making soup in the winter is that there really doesn’t have to be a strict recipe. This one contains every veggie imaginable, no.. seriously. I included all kinds of things with supposed “detox” capabilities. Garlic, cabbage, apple cider vinegar, cayenne, and maybe a few other zillion things. It’s really good, I promise

1000 Veggie Detox Soup
6 cups of vegetable broth (or just enough to cover the veggies)
1 14.5oz can of diced tomatoes
2 tbsp of tomato paste
1 tbsp of olive oil
4 tbsp apple cider vinegar, or plain vinegar
1 small yellow onion, diced
1 small zucchini, chopped
2 cups of frozen green beans
3 cups of cauliflower, roughly chopped
4 stalks of celery, diced
3 cups of cabbage
1 tsp of chopped garlic
Salt and Pepper to taste
**a dash of cayenne if you like spicy
Embarrassingly enough, I just dumped everything into a heavy pot, brought it to a boil, and then lowered the temperature and simmered for 30 minutes.
I know those aren’t really directions, but this soup turned out great
**Cook’s Note: I ran out of vegetable stock so I just added enough water to cover the top of the veggies and then seasoned it a bit more with salt and pepper
